    45 minutes
Ingredients
  • 1 large head of cauliflower, chopped into florets
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream (or coconut milk for a dairy-free option)
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves, plus extra for garnish
  • Salt and pepper, to taste
  • Optional: 1/4 teaspoon smoked paprika for a hint of warmth
Directions
  1. Preheat your oven to 425°F (220°C).
  2. On a baking sheet, toss the cauliflower florets with olive oil, salt, pepper, and smoked paprika if using. Spread them out in a single layer and roast for about 25-30 minutes, or until golden brown and tender.
  3. In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic and fresh thyme, cooking for an additional minute until fragrant.
  5. Once the cauliflower is roasted, add it to the pot along with the vegetable broth. Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.
  6. Remove from heat and using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, you can carefully transfer the soup in batches to a countertop blender.
  7. Stir in the heavy cream (or coconut milk) and adjust seasoning with more salt and pepper if needed. Heat gently on low until warmed through.
  8. Serve hot, garnished with a sprinkle of fresh thyme leaves and a drizzle of olive oil for a finishing touch.

This Reinforced Roasted Cauliflower Bisque takes a traditional soup and adds depth and richness that is often missing in typical versions. By roasting the cauliflower, we not only bring out its natural sweetness but also introduce a layer of complexity through caramelization. The addition of fresh thyme infuses the soup with an earthy, aromatic quality that pairs beautifully with the creaminess of the bisque.

Inspiration for this recipe came from a desire to create a dish that feels luxurious yet remains wholesome. The use of smoked paprika is a nod to the flavor profiles found in some Mediterranean cuisines, giving this bisque a unique twist that sets it apart from the usual creamy soups.

"In crafting this bisque, I wanted to highlight the beauty of simple ingredients while elevating them with unexpected flavors. The thyme adds a garden-fresh essence that transports you straight to a sunlit herb patch."

This recipe is designed to be versatile; feel free to customize it by adding spices or herbs that resonate with your palate. Whether you choose to keep it classic or experiment, this bisque promises to deliver a bowlful of comfort and sophistication. Perfect for impressing guests or enjoying a quiet evening at home, this soup is truly a testament to the versatility and flavor potential of cauliflower.
