Directions
  1. In a large pot, combine the pork bones and water. Bring to a boil over high heat, then reduce the heat and simmer for 30 minutes. Skim off any scum that rises to the surface.
  2. Add the chicken stock, onion, garlic, and ginger to the pot. Simmer for an additional 3.5 hours, allowing the flavors to meld and the broth to become rich and flavorful.
  3. After simmering, strain the broth into a clean pot, discarding the solids. Return the broth to the stove and stir in the soy sauce, miso paste, and sesame oil. Keep warm over low heat.
