  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 12 cups water
  • 8 oz rice noodles (bánh phở)
  • Fresh herbs: Thai basil, cilantro, and mint
  • 2 limes, cut into wedges
  • Sliced jalapeños (optional)
  • Bean sprouts (for garnish)
  • Hoisin sauce and sriracha (for serving)
  • A splash of coconut milk (for a unique twist)
Directions
  1. In a large pot, add the beef bones and cover with water. Bring to a boil and let it simmer for about 10 minutes. This helps remove impurities. Drain and rinse the bones.
  2. Return the cleaned bones to the pot, add the charred onion, ginger, star anise, cinnamon stick, cloves, coriander seeds, fish sauce, sugar, and 12 cups of water. Bring to a boil, then reduce to a low simmer for about 1.5 to 2 hours.
  3. During the last 30 minutes of simmering, add the sliced brisket to the pot to cook through.
  4. Remove the bones and brisket from the pot. Strain the broth through a fine mesh sieve to capture the aromatic spices and solids.

  6. In bowls, layer the cooked noodles, top with slices of brisket, then ladle the hot broth over them.
