Ingredients

  • 1 teaspoon turmeric
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 1/2 cup vermicelli pasta (optional)
Directions
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute, allowing the flavors to meld.
  3. Add the lentils, diced tomatoes (with their juice), and vegetable broth to the pot. Bring the mixture to a boil.
  4. Reduce the heat to low and add the cumin, cinnamon, ginger, turmeric, smoked paprika, salt, and pepper. Stir well to combine.
  5. Cover the pot and let the soup simmer for about 20 minutes, or until the lentils are tender.
  6. If using, add the vermicelli pasta and cook for an additional 5-7 minutes, until the pasta is al dente.
  7. Stir in the chopped cilantro and parsley, and remove the pot from heat.
  8. Just before serving, add the lemon juice for a bright finish. Adjust seasoning if necessary, and serve hot.
