Ingredients

  • 1 tablespoon coffee grounds (fine)
  • 2 tablespoons vegetable oil
  • Fresh parsley, for garnish
Directions
  1. In a large mixing bowl, combine red wine vinegar, water, onion, garlic, brown sugar, salt, black pepper, cloves, allspice, and juniper berries. Stir until well mixed.
  2. Place the beef chuck roast in a large resealable plastic bag or a glass dish, and pour the marinade over the meat. Seal the bag or cover the dish, making sure the roast is well submerged in the marinade. Refrigerate for at least 24 hours, turning occasionally.
  3. Preheat your oven to 325°F (160°C).
  4. Remove the beef from the marinade and pat it dry with paper towels. Reserve the marinade for later use.
