  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 dried ancho chilies, seeds removed
  • 2 dried guajillo chilies, seeds removed
  • 1 tablespoon sesame seeds
  • 2 tablespoons pumpkin seeds (pepitas)
  • 1/4 cup sliced almonds
  • 1 can (14 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 1/4 cup dark chocolate (70% cacao), chopped
  • 1 teaspoon cinnamon
  • 1 teaspoon cumin
  • 1/2 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Fresh cilantro, chopped for garnish
  • Lime wedges, for serving
Directions
  1. Start by preparing the dried chilies. Place the ancho and guajillo chilies in a dry skillet over medium heat. Toast them for about 2-3 minutes until fragrant, then remove from heat and soak them in hot water for 15 minutes until softened. Drain and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.
  3. Add the soaked chilies, sesame seeds, pumpkin seeds, and almonds to the pot. Stir well and cook for another 2 minutes.
  4. Add the diced tomatoes and tomato paste, mixing everything together. Allow it to simmer for about 5 minutes.
  5. To the pot, add the dark chocolate, cinnamon, cumin, allspice, nutmeg, honey, apple cider vinegar, and chicken broth. Stir until the chocolate melts and everything is well combined.
  6. Season with salt and pepper to taste. Allow the mole sauce to simmer on low heat for about 1 hour, stirring occasionally, until thickened.
  7. While the mole is simmering, season the chicken thighs with salt and pepper. In a separate skillet, sear the chicken thighs skin-side down over medium-high heat until golden brown, about 5-7 minutes per side.
  8. Once the chicken is seared, add it to the pot with the mole sauce. Cover and let it cook for another 30 minutes, allowing the chicken to absorb the flavors.
  9. Serve the Monte Carlo Mole over a bed of rice, garnished with fresh cilantro and lime wedges. Enjoy the rich, complex flavors!

Monte Carlo Mole is more than just a meal; it’s a journey through flavors and cultures.
