  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 lime, zested and juiced

Directions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add the chopped onions and garlic. Sauté until they are translucent, about 3-4 minutes.
  3. Add the ground beef (or shredded chicken) to the skillet and cook until browned, breaking it apart with a spatula as it cooks.

  5. Spread a thin layer of enchilada sauce on the bottom of a 9x13 inch baking dish.
  6. Take a tortilla and spoon about 2-3 tablespoons of the meat mixture into the center. Sprinkle with a little cheese, then roll it up and place seam-side down in the baking dish. Repeat with the remaining tortillas.
  7. Once the tortillas are all rolled and placed in the dish, pour the rest of the enchilada sauce over the top and sprinkle with the remaining cheese.
  8. Cover the dish with aluminum foil and bake for 15 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  9. Garnish with fresh cilantro and serve with lime wedges on the side.
