    30 minutes
Ingredients
  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 1/2 cup all-purpose flour, for dredging
  • 3 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 8 ounces cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 3/4 cup Marsala wine
  • 1 cup chicken broth
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)
Directions
  1. Season the chicken breasts generously with salt and black pepper on both sides. Dredge each breast in flour, shaking off any excess.
  2. In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Once hot, add the chicken breasts and cook for about 5-7 minutes on each side or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining butter and the sliced cremini mushrooms. Sauté for about 5 minutes until they are browned and tender.
  4. Add the minced garlic to the skillet, stirring for about 30 seconds until fragrant.
  5. Carefully pour in the Marsala wine, scraping any brown bits from the bottom of the pan to deglaze. Let it simmer for 2-3 minutes until slightly reduced.
  6. Add the chicken broth, return the chicken breasts to the skillet, and let everything simmer together for an additional 10 minutes, allowing the flavors to meld.
  7. Taste and adjust seasoning if necessary. Once done, garnish with chopped parsley and serve with lemon wedges on the side.

Chicken Marsala is a dish that has roots in Italian cuisine, yet it has been embraced and adapted by American cooks, particularly in the early 20th century. The use of Marsala wine, a fortified wine from Sicily, gives the dish its distinctive flavor. The sweetness of the wine melds beautifully with the savory elements of the chicken and mushrooms, creating a rich sauce that elevates the entire meal.

What makes this particular version unique is the addition of sautéed cremini mushrooms and garlic. The mushrooms impart an earthy depth that complements the sweetness of the Marsala, while the garlic adds a fragrant kick, enhancing the dish's overall complexity.
