  • Cook TIME
    4 hours (including chilling time)
Ingredients
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 vanilla bean, split and seeds scraped
  • 2 1/2 teaspoons gelatin powder
  • 3 tablespoons cold water
  • 2 cups fresh raspberries
  • 1/4 cup powdered sugar
  • 1 tablespoon lemon juice
  • Fresh mint leaves for garnish (optional)
Directions
  1. In a saucepan, combine the heavy cream, whole milk, granulated sugar, and vanilla bean seeds along with the split bean. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally to dissolve the sugar.
  2. In a small bowl, sprinkle the gelatin over cold water and let it sit for about 5 minutes to bloom.
  3. Once the cream mixture is hot, remove it from the heat. Remove the vanilla bean pod and add the bloomed gelatin to the hot mixture, stirring until fully dissolved.
  4. Pour the panna cotta mixture into four ramekins or dessert glasses. Allow them to cool to room temperature, then cover and refrigerate for at least 4 hours, or until set.
  5. While the panna cotta is chilling, prepare the raspberry coulis. In a blender or food processor, combine the fresh raspberries, powdered sugar, and lemon juice. Blend until smooth, then strain the mixture through a fine mesh sieve to remove the seeds.
  6. Once the panna cotta has set, carefully run a knife around the edges of each ramekin to loosen the dessert. Invert the panna cotta onto a plate or serve directly in the glasses.
  7. Drizzle the raspberry coulis over the top and garnish with fresh mint leaves if desired. Serve immediately and enjoy the delightful contrast of flavors!

The "Perceptron Panna Cotta" is more than just a dessert; it's a fusion of tradition and innovation. Panna cotta, which translates to "cooked cream," has been a staple of Italian cuisine for centuries. Originating from the northern region of Piedmont, this dessert is typically made with cream, sugar, gelatin, and vanilla, resulting in a silky smooth consistency. However, our twist lies in the use of real vanilla bean, which elevates the flavor profile and adds a touch of luxury.

Inspiration for this recipe came from the idea of blending classic techniques with modern presentation. The addition of the raspberry coulis introduces a dynamic acidity that cuts through the richness of the panna cotta, creating a well-rounded dessert.

"The beauty of panna cotta lies in its simplicity, yet it offers endless possibilities for creativity. By incorporating seasonal fruits or flavored coulis, one can transform a traditional dish into a contemporary masterpiece."

What makes this panna cotta stand out is not just the luxurious vanilla flavor but also the vibrant raspberry coulis that adds a fresh and tangy contrast. This combination of textures and flavors ensures that each bite is an experience in itself. Whether you're serving it at a formal dinner or enjoying it as a sweet treat at home, the "Perceptron Panna Cotta" is sure to impress and satisfy, proving that even the simplest recipes can be elevated into something extraordinary.
