Ingredients
  • 1 cup glutinous rice flour (mochi flour)
  • 1 cup water
  • 2 tablespoons sugar

  • 1 cup sweetened red bean paste
  • 1 tablespoon coconut milk
  • Cornstarch (for dusting)

Directions
  1. In a mixing bowl, combine the glutinous rice flour, water, sugar, and matcha powder. Stir until the mixture is smooth and free of lumps.
  2. Pour the mixture into a microwave-safe bowl and cover it with plastic wrap. Microwave on high for 1 minute, then stir. Repeat this process for an additional 2 minutes, stirring after each minute until the dough becomes sticky and slightly translucent.
  3. Once cooked, let the dough cool for a few minutes until it can be handled.
  4. Dust a clean surface with cornstarch to prevent sticking. Transfer the mochi dough onto the surface and divide it into 8 equal pieces.
  5. Flatten each piece into a disc about ¼ inch thick.
  6. In a small bowl, mix the sweetened red bean paste with coconut milk until smooth and creamy.
  7. Place a spoonful of the coconut-infused red bean paste in the center of each mochi disc.
  8. Carefully fold the edges of the disc over the filling, pinching to seal it tightly.
  9. Roll each filled daifuku in cornstarch to prevent sticking, and if desired, roll in shredded coconut for added texture.
